8's will make you wheel bearings last alittle longer vs the 10's.

either one will work fine, i guess its more of a personal preference on how you like it to look.

8s will also retain the bead better when you air your tires down for offroad, and the rim edge will be somewhat better protected from rock scrapes or other damage as well.
10s will handle slightly better onroad (more sidewall support).

IMO, I'd go 8s for the better bead retention and bearing life.

I would also go with 8" rims.

it also depends on what tire brand you plan to run...interco(superswampers) has a full chart to go with every tire to tell the rim width and much more. any good tire shop will be able to tell you what size rim you need once the tires are chosen. as for the ten inch rim i have a set with 31x10.50x15 and because it is so wide it wears the center of the tire(i know you want 35x12 but remember this just in case you have to downsize)

the standard rule of thumb with oversized tires it 4" smaller then the tire, so for a 12" wide tire the best rim will be a 8" wide rim, u will not pop the beads as easilyas with a 10" wide, and u will have alot more room for sidewall flex....
