Check your fan clutch, does the truck run very warm to hot? Do you hear that compressor cycling on and off? When you turn it off do you hear the refrigerant gurgling?

Edit,
Also, some of the other guys may want to confirm this I believe there is a time delay when it's turned off and comes back on again and I believe it's built into the onboard computer does it come on after you start driving and start going again?

Welcome to TRS :)

AC system is different in 2002 between 4cyl(2.3l) and the V6 engines so which do you have?

Under charged and over charged will both cause AC to run cold and then change to warm, so I would get system pressure checked, just to take that off the table.

As Denisefwd93 said, check if compressor is on when you restart the engine an AC is blowing warm.
Compressor is turned on only IF both pressure safety switches are Closed, if after using the AC for the short drive and shutting it down, the pressure in the HIGH side or LOW side could be getting too HIGH or too LOW which prevents compressor from restarting.
